Hazelnut and Coconut Energy Balls

...because you can never have too many recipes for energy balls...

I have such a sweet tooth, give me something chocolately over something savoury any day!! But I also want to balance my blood sugar and avoid those mid afternoon energy slumps that would come from a Snickers.

The nuts and dates are a good source of fibre and cacao is a great source of antioxidants which help to keep our cells functioning at their best.

Trust me, if you swap your usual chocolate bar for one of these energy balls you will feel the difference, less sleep, more focused and less likely to binge the whole box!

Ingredients

  • 20 grams

    Pitted Dates, such as Medjool
  • 1 tbsp

    Raw Cacao Powder
  • 70 grams

    Hazelnuts (chope these up in your mixer first!)
  • 2 tbsps

    Unsweetened Dessicated Coconut

Method

  1. Add the hazelnuts to your food processor (Magimix) first until they are chopped fine. Next add the dates + cacao. Blend until the mixture is sticky and holds together. Depending on the stickiness of the dates I sometimes add a tsp of coconut oil to make sure they hold together really well.
  2. Transfer the mixture to a bowl and then take a small walnut sized handful of the mixture + roll it in your hands to create a ball. Continue until you have used up all of the paste.
  3. Roll each ball in the coconut until evenly coated. Chill in the fridge for about 30 minutes - (I like to store my energy balls in empty egg boxes in the fridge.
