Dark Chocolate bark with Cranberries, Pomegranate Seeds and Pistachio Nuts

This is my all time favourite treat at Christmas.... It is the most beautiful thing to look at and of course all the ingredients are wonderfully healthy. Use the best quality dark chocolate you can find... I love at least 85%.... and then enjoy not just the oohs and ahhs as you lay it on the table, but the wonderfully relaxing art + design of crafting it to your best design... and to that end you can go as wild as you like... gold leaf, rum soaked raisins.... let your imagination run wild. 

 

Pistachios are a memeber of the cashew family, (which also includes mangoes).Pistachios are an excellent source of B Vitamins and Vitamin E as well as magnesium and zinc. Pistachios are also the richest source of potassium of all the nuts. Pistachios are great to put out as snacks at Christmas, being light in weight, a single 30g serving equates to almost 50 nuts!!

Ingredients

1 100g bar of finest dark chocolate

1 tbsp coconut oil

A small handful each of

  • pistachio nuts
  • pomegranate seeds
  • dried cranberries 

Method

First break your chocolate bar up into a few smaller slabs 

Put the chocolate wth 1 tbsp of coconut oil in a metal or pyrex bowl 

Place the bowl over a pan of gently simmering water until all the chocolate has melted

Once melted, pour the choclate onto a large square of baking parchement

Leave to cool a little, but not set, then sprinkle / press your toppings into the soft chocolate

As it cools and hardens your chocolate will be ready to serve

(if you put it in the fridge to cool the chocolate may lose some of its shine)
