Chocolate Peanut Protein Bites

Unctuous and delicious, I adore these protein dense bites and it's always a good day when I get back from the gym and find a tray of these, ready to enjoy with a cup of coffee. 

I like to make them using a whey protein powder from The Organic Protein Co. Their vanilla flavour isnt too sweet, but you can substitute that for a plant based protein powder such as Nuzest instead.

Ingredients

  • 250 grams

    All Natural Peanut Butter
  • 65 grams

    Vanilla Protein Powder
  • 1 1/2 tbsps

    Coconut Flour
  • 100 grams

    Dark Chocolate
  • 1/2 tsp

    Sea Salt flakes such as Malden

Method

  1. Line a square brownie tin with baking parchment paper.
  2. In a small bowl, mix the peanut butter, protein powder and coconut flour together with a wooden spoon.
  3. Spread your mixture into the prepared baking tin + press it down to make a smooth base.
  4. Add the chocolate to a bowl and microwave on high for 30 to 45-second intervals until melted. Make sure it's well mixed + melted.
  5. Pour the chocolate over top and gently spread into all the corners. Top with flaky sea salt. Refrigerate for one hour or until the chocolate has hardened and the peanut butter bar has set.
