Chocolate Chia Bowl

If I had to chose my last meal, I think it would be this.... honestly, no word of a lie, a beautiful (and it would have to be beautiful) bowl of rich cacao and chia seeds. Being my last meal the health benefits would be somewhat lost on me, but under other happier and more general circumstances, the benefits serve me well. Rich in Omega 3 and Fibre, packed with anti oxiadants, a good source of protein, this breakfast bowl will keep you full and glowing all morning. A steady source of slow release energy, you will feel satiated without the bloated feeling you can get from bread and with none of the mid morning sugar crash you can get from cereal. Give it a go, I'm on a mission to convert you!

Chocolate Chia Pots

Ingredients

INGREDIENTS

2 tablespoons of black chia seeds

200ml (or approx 1 cup) of coconut milk (or any non-dairy milk of your choice)

1 tbsp of raw cacao powder

OPTIONAL

1 tbsp of pea / hemp protein powder

1 tbsp of cacao nibs

1 tbsp of smashed whole almonds (I keep a jar of these on hand)

coconut flakes, a tbsp of almond butter, fresh berries

Method

The night before you can mix up a jar of chia seeds, cacao powder and milk. Keep stirring it every now and again as you will notice the seeds swell up and absorb the liquid and this will stop them from clumping together.

You can add extra ingredients with the milk and put them all in a blender if you like, then pour your bleneded smoothie over the chia seeds to mix. I sometimes do this with half a banana, cacao, protein powder and coconut milk. The flavour is sublime.

If I am using a chocolate flavoured protein powder (such as Nuzest) the flavour is already quite sweet (no sugar added I assure you) and I dont need the banana... but a good tbsp of almond nut butter or almonds added to the blender makes a delicious protein rich blend.

You could of course just throw the chia seeds in to the mixer too and add a bit more milk and you would have a smoothie here... but this is a breakfast bowl, so I like to let the chia seeds do their thing
