Tuscan Butterbean Dip

For days when you want a little something on toast (that is not hummus); try this beauty... Tuscan bean dip.

I like Biona Gluten Free Millet toast for this, but be aware it needs extra long toasting time to make it really crispy. 


1 drained and rinsed can of white cannelloni beans
10-12 sun dried tomatoes (rinse the oil off when you drain them)
1 small garlic clove
1/2 sprig of fresh rosemary 
Season S+P


Blitz up all your ingredients in the food processor; this dip is very Moreish .... try it on a couple of slices of Gluten Free Milllet bread, well toasted so it’s crisp and try topping with some crunchy red peppers.

This dip is a great source of fibre in the diet; we need at least 24g fibre per day, best still 35g and most people, on a standard western diet probably get about 10.... legumes and pulses are a great way to increase the fibre in your diet; ???
