Best Breakfast Omelette

You have to try this, you'll never look back. You might be wondering why I am including an omelette, surely everyone can make an omelette? Well, firstly no, not true and secondly, even if you do make omelettes, I implore you to try making these with coconut oil. The texture is light and fluffy and the flavour is so delicate. Made here with pesto but I also love mixing my omelettes with a little turmeric, black pepper, dash of chilli flakes and heaps of fresh chopped coriander; or better still try some Middle Eastern vibes with a dusting of za'atar ( you can buy this from Ocado). Za'atar is a delicious blend of wild thyme and sesame seeds, it goes beautifully with fluffy eggs and a mound of fresh made guacamole or labneh.

TOP TIP: I have a small Le Creuset frying pan that I use to make omelettes. Somehow, the cast iron gets super hot so it cooks omelettes in just a minute or two, it is naturally non stick, never a hassle to wash up and just my favourite thing to use. I also use it to dry toast nuts and seeds, so if youve got a birthday coming up, pop this pan on your pressie list (this isnt an ad. by the way, I just geniunely love it and know you will too). This its the 23cm size. 

Ingredients

1 tbsp of coconut oil

2 organic eggs

2 tbsp of pesto (see recipe)

Salt + Pepper

dark green leaves to serve

Method

Start with a small pan, heat your tablespoon of coconut oil. Cooking omelettes in coconut oil has TOTALLY elevated them in my eyes. LIght, fluffy and not at all greasy, this is a recipe I make weekly at home.

Crack your eggs into a small bowl and whisk them up lightly with a fork. Pour your eggs into the hot pan. Immediately start pulling the outside edge of the omlette into the middle of the pan and roll the soft egg mix from the middle to the edges. Keep rolling and let the omelette fluff up as it cooks. Spoon 2 tbsp of pesto into the middle of the pan, fold in half and slide onto a plate. Serve with dark green leaves such as scrunched kale, rocket, watercress + avocado. Perfect breakfast, lunch or simple supper.
