Ibiza Sunset Raw Slaw Salad

Diversity of Plants • More colours on your plate • Crucial role of lots of different coloured vegetables and fruits • call it as you will, the simple fact is that colour improves health by providing the spectrum of tools to combat disease • imagine there's a massive leak and water is pouring through the sealing - the Plumber turns up with a wrench, but he hasnt brought a stepladder, or a scredriver or a hammer... you get hte point. We need the full spectrum of nutrients, provided by nature, through colour, to fix the leak xx
 
That's why I love this simple slaw, with all the vivid colours of an Ibiza Sunset • it takes 5 mins if you use the grater attachment in a mixer •

Ingredients

2 small parsnips 
2 small carrots
1/4 red cabbage
1 red pepper
Handful of coriander
Tbsp of toasted sesame seeds
Drizzle of home made dressing (ACV + Olive Oil)
And the juice of half an orange (which was on hand.... optional)

 

Method

You can etiher use the grater setting on your mixer and simply feed all your veg through the top of the mixer to grate. Otherwise use a potato peeler or julienne slicer to cut all the different veg into thin slivers.

 

I love to use a simple dressing of 1 part Apple Cider Vinegar to 3 parts Extra Virgin Olive Oil, add a dash of honey and a half tsp of dijon mustard, season well and thats your lot! But feel free to spritz ove rthe juice of half a lemon or an orange - this salad keeps well for a couple of days in the fridge so make plenty x delicious with breakfast omlettes and half an avocado for breakfast
