Cod, Bacon + Sweet Potato One Pan

Ingredients

  • 6 slices

    Bacon (chopped)

  • 1

    Large White Onion

  • 1 tbsp

    Olive Oil

  • 1 or 2

    Sweet Potato (or half and half with baby new potatoes)

  • 25 grams

    Parsley (chopped)

  • 1 tbsp

    Lemon Juice

Method

  1. Start by chopping your sweet potato and roasting for 20 - 30 mins in a hot oven - when I cook this for the kids I add in a few baby new potatoes Next, heat a large non-stick pan over medium heat and saute the bacon and the onions for three to four minutes, or until the bacon is crispy.
  2. Now add the cod aand cook for a further two to three minutes, breaking it up as it cooks.
  3. Next, add back in the roasted sweet potatoes and a handful each of chopped green beans, asparagus and tenderstem (or which ever green veg you wish to serve with the cod).
  4. Cook, stirring occasionally, for about five minutes until every thing is cooked through.
  5. Stir in the parsley and add a squeeze of fresh lemon to invigrate the flavour of the cod.
