Best Breakfast Omelette
You have to try this, you'll never look back. You might be wondering why I am including an omelette, surely everyone can make an omelette? Well, firstly no, not true and secondly, even if you do make omelettes, I implore you to try making these with coconut oil. The texture is light and fluffy and the flavour is so delicate. Made here with pesto but I also love mixing my omelettes with a little turmeric, black pepper, dash of chilli flakes and heaps of fresh chopped coriander; or better still try some Middle Eastern vibes with a dusting of za'atar ( you can buy this from Ocado). Za'atar is a delicious blend of wild thyme and sesame seeds, it goes beautifully with fluffy eggs and a mound of fresh made guacamole or labneh.
TOP TIP: I have a small Le Creuset frying pan that I use to make omelettes. Somehow, the cast iron gets super hot so it cooks omelettes in just a minute or two, it is naturally non stick, never a hassle to wash up and just my favourite thing to use.
